How was Bluebird Brunch Hatched?

We’re so glad you asked!

In early 2023, our founder, Shannon Hicks, created a small business called Bluebird Granola. She was local to Victoria, Texas bringing her small batches of granolas to the local Farmers’ Market. Eventually, she started to venture to surrounding cities and parts of Texas to sell her granolas.

The more she made, the more people came to the shows she was at to purchase granola. Eventually, other products were slowly added and she always asked for her customers input. Most of them, were looking for the same things she enjoyed, local, small bites with big flavor!

In July of 2025 Shannon started to put together her next venture. She was still producing granola, but began testing other products with her customer base. These products included crackers, croissants, pastries, waffles, seasonings and jellies amount other things.

That folks, is how Bluebird Brunch was hatched from Bluebird Granola.

We officially take flight in 2026 and we can’t wait to offer you new ways to order, places to shop our products, new products and so much more!
